Sea Bream Carpaccio Marinated in Kelp

A slightly more luxurious version of sea bream for sashimi

While sea bream is a staple at celebratory gatherings, it’s not just a symbol of good fortune—it’s also a fish that’s good for your health.
Kombu is considered a symbol of good luck because its name is phonetically similar to the word “yorokobu” (to rejoice), and even the sake served in a “hanamasa” cup at celebratory gatherings evokes a sense of good fortune that goes beyond just its taste.

Ingredients: Serves 2

Sea Bream Sashimi (1 pack)
Kombu (10 cm × 10 cm) 2 sheets
A pinch of salt
2 tablespoons of water
1 tablespoon vinegar

How to Make It

1. Sprinkle salt on the sea bream sashimi, let it sit for about 10 minutes, then pat it dry with paper towels.

2. Pour the water and vinegar into a dish, mix lightly, and quickly dip both sides of the two sheets of kelp into the mixture.

3. Arrange the sea bream—which has been patted dry—on top of the kombu, which has softened slightly, making sure the pieces don’t overlap. Place another layer of kombu on top, wrap the whole thing in plastic wrap, and let it rest in the refrigerator.

4. Plate it, and you're done.

*The longer you leave it, the more the kelp flavor will infuse into the sea bream, but it’s best not to leave it for more than about a day.
